Easter Lunch 2025: A Unique Gastronomic Experience

To celebrate Easter 2025, our restaurant has prepared a special menu that blends tradition and innovation, offering an unforgettable culinary experience. Each course has been designed to enhance the authentic flavors of the season, with carefully selected ingredients and refined combinations.

The lunch begins with an elegant welcome entrée: a stuffed egg with potato mousse and baby cuttlefish, a delicacy that prepares the palate for the gastronomic journey ahead.

As an appetizer, we offer a gratinated asparagus and ricotta tart, enriched with a CBT egg yolk and carletti (silene herb), a dish that celebrates the flavors of spring.

The first courses are an explosion of taste and creativity: beetroot and smoked ricotta gnocchi on nettle cream with toasted hazelnuts offer a unique contrast of flavors, while lasagna with white asparagus from Cimadolmo, quail, and a drop of sweet pepper sauce brings a refined and enveloping combination to the table.

For the main course, our proposal is juniper-infused slow-cooked lamb shoulder, served with toasted potato purée, goat robiola cheese, and a tasty potato skewer.

To end on a sweet note, the dessert “The White Rabbit” will amaze with its white chocolate cream, heart of lemon and violet jelly, pistachio sponge cake, and ruby chocolate.

The lunch will be accompanied by focaccia and coffee to close with a touch of tradition.
